Francesco Illy continues his stories of Podere Le Ripi, in Montalcino, Italy. Here he recounts his experiment with the Bonsai Wine, planting 4mx4m with 121 plants/m2, or 62,500 plants per hectare - the densest vineyard in the world! The beauty of doing every part of the winemaking process by hand, including the destemming and crushing - every single berry being perfectly healthy, and maybe only 1 or 2 berries were discarded during the entire process. ONLY PERFECTION in the Bonsai Wine
